The wine
The cuvée "Copa Santa" takes its name from a poem by Frédéric Mistral, the symbol of Occitania. It is vinified in concrete vats and aged in 35hl casks, 300l barriques and 500l demi-muids. It exudes aromas of red and black fruit, as well as spicy and finely woody notes. The palate is full-bodied and has the same aromas as the nose, mixed with sweet spices. It unfurls high density, velvety tannins, power and a long finish. Enjoy with beef, duck or lamb, when young or after 4-5 years in the cellar.
About the Producer Pierre Clavel
The organically-run Domaine Clavel is a 33-hectare family business which produces racy, fruity wines with powerful aromas. Located in Assas, Estelle, Pierre and their two sons cultivate their vines in pebbly soil, surrounded by forests and scrubland. They also experiment with biodynamic methods and limit their yields. Vinification methods are traditional, and élevage is conducted in concrete tanks, small foudre barrels and egg-shaped vats.
