The wine

An official Bimber single cask (#13-319) distilled in 2018, matured in a bourbon cask and finished in a Pedro Ximenez cask for 9 months, bottled in 2022 for La Maison du Whisky’’s annual Antipodes catalogue. A limited edition of 321 bottles.

About the Producer Bimber

The Bimber distillery, built in 2015 in Park Royal, in north-west London, was the first distillery to appear in the capital for over a century, following the closure of the last in 1903. Bimber, which is Polish for “illicit alcohol’‘, was named by founder Dariusz Plazewski, who grew up in a family of distillers and moved to London in 2003. Distillation began the following year and the first single malt was released in 2019. The company sources its barley from a single producer, uses traditional malting floors and favours slow fermentation (seven days in wooden washbacks). This artisanal approach continues with the use of gas-fired Spanish Hoga stills. The ambitious distillery has met with great success and new editions are always highly awaited.
