The wine
This is a rare, natural gem crafted by a domain dedicated to organic growing. Years have been spent observing the vines and experimenting with the land by raising animals there, applying horn silica preparations, and using herbal tisanes on the vines. In the winery, this quest for excellence in respect for nature continues. The Pinot noir harvested in September 2016 was vinified and matured in amphora before being disgorged in December 2018.
In the glass we find a pale yellow wine with a golden hue and delicate bubbles. These bring to the surface aromas of raisin, lime, citrus zest, and exotic fruit. The palate is marked by an acidity that nicely balances the ripeness of the fruit, and the finish is lightly saline. This cuvée can be aged in the cellar for a few years; it will serve nicely as an aperitif or at the table.
