Cuvée des Moines Besserat de Bellefon
The wine
Cuvée des Moines is the domain's most famous wine, and was created in homage to the Benedictine monks who discovered the Champagne fermentation process. In its Brut version, it has a nose with floral, fruity aromas (white peach, mirabelle plum) and notes of hazelnut and praline. The attack is direct, emphasising freshness, and the mouth is full of roundness, with great creaminess and fruity aromas (peach, apricot, pineapple). The long finish is very pleasant.
About the Producer Besserat de Bellefon
Maison Besserat de Bellefon originated in Aÿ in 1843 with the creation by Edmond Besserat of his champagne house. It was renamed Besserat de Bellefon after the marriage of Edmond Besserat (the founder’s grandson) to Yvonne Meric de Bellefon. This champagne house is particularly famous for its "Cuvée des Moines", developed for gastronomy, in response to the challenge launched by the Director of the Samaritaine de Luxe to design a champagne designed to ideally accompany an entire meal.
