The wine
The Pinot Noir used for this cuvée was planted some 40 years ago on a little lieu-dit baptised "Val Vilaine”. The grapes draw their elegance and delicacy from the highest point of this terroir. The wine reveals delicious notes of stone and red fruit, balanced by some floral hints, and a wonderful mineral quality enhances the full flavour and creaminess. Superb with maritime-influenced dishes.
About the Producer Cédric Bouchard
Cédric Bouchard, son of a winemaker, runs the estate of the same name based in Aube, on the Côte des Bar. He runs the small domain of Roses de Jeanne (one hectare), located in the Ource Valley, as well as Inflorescence in Val Vilaine. His agricultural methods are reasoned and controlled, quite close to the principles of biodynamics. His champagnes are renowned and sought after, production being very limited.
