The wine
This Chablis is produced from two radically different parcels, the combination of which produces a wine with a particularly ripe yet taut profile. The nose is lifted by notes of citrus fruits and the mouth strikes a perfect balance between powerful notes of stone fruits and delicate notes of citrus fruits. It should be enjoyed in its first ten years and is the perfect pairing for seafood or poultry.
About the Producer Alice et Olivier De Moor
Although Alice (from the Jura) and Olivier (from Burgundy) De Moor export most of their production, they have over the years forged an excellent reputation for themselves. Their wines have been certified organic (Ecocert) for 10 years. With low yields, manual harvests and very little sulfur used, these two winemakers visibly work with meticulous care both in their viticulture and vinifications. The 2009 vintage marked their first year running a small négociant business on the side, in the Chablis and Chablis Premier Cru appellations.
