Here, in both the vineyard and the winery, the idea is to let the Chardonnay varietal express its identity and that of its terroir. The vines enjoy the appellation’s chalk-rich soils and high-quality attention (ridging in the autumn, de-ridging in the spring, ploughing), as well as limited yields. Harvested by hand, the Chardonnay grapes undergo a very slow pressing and a maturation in used, oak casks for a year. The aim here is for the wine to develop a certain purity. This is a cuvée to be enjoyed in the first fifteen to twenty years of its life. Its pale, yellow colour has hints of gold, exhaling a delicate aromatic bouquet marked by notes of white flowers, lemon zest, and honey. On the palate, we sense the minerality typical of this appellation. This element is balanced with a pleasant, fleshy profile that promises elegant pairings with crustaceans, fresh goats’ cheese, or salmon tartare.

About the Producer Joseph Drouhin
Founded in Beaune in 1880, the Joseph Drouhin house is now run by the four children of Robert Drouhin. Present throughout Burgundy, but also in the United States in Oregon, its reputation is worldwide. It also has a domain of its own, including a vineyard of 72 hectares.
